Unhelpful Recipes: Bright and Fresh Avocado Tuna Salad

I don’t know about you guys but, for me, summer = delicious fresh salads all the damn time. Sure, I like to make a big salad filled with all sorts of fancy ingredients when I have time, but today I had like five minutes to make a lunch and only limited ingredients.

Enter: this delicious bright salad lunch.

Ingredients:

1 can of tuna (I like chunk light but my mother thinks solid white is the only way to go)

1 avocado

3 or 4 sun dried tomatoes, chopped up tiny

Splash of olive oil

BIG splash of lemon juice

Directions:

Toss all that goodness into a bowl and mix ‘er up until just blended. I like to leave the avocado fairly chunky but if you want to make it closer to a creamy texture, then that’s your decision and will support you wholeheartedly. BUT, if you eff this up by forgetting or substituting the lemon juice then you are dead to me.

Serve icy cold (I stored mine in my lunch bag…I mean, fancy grown up lady purse…with an ice pack until noon).
