It’s FALL! Time to start really taking advantage of root vegetables. To me, baking with carrots is a great treat this time of year. In fact, a little reminder in the form of carrot cake cupcakes that I was treated to this weekend gave me the inspiration to do a few batches of carrot muffins for breakfast and snacks this week.
I doubled this recipe from Technicolor Kitchen and they turned out really well, although they are definitely more like muffins with carrot than carrot muffins. They don’t really have the spicy carrot cake appeal that I was hoping for. They’re still delicious though and I loved the addition of my CSA carrots! (That’s another for the contest!) Oh, and using ghoulish skull paper cups gives a fun Halloween twist on the snack.
